Recipe by Veganella
Dinner for 2
300g cooked quinoa
1 can chickpeas
3 tbsp olive oil
1/3 tub Kavita’s Kitchen curry paste (any flavour)
1 onion diced
2 cloves garlic
200g kumara, cubed and cooked
3 tbsp tamari
3/4 cup chickpea flour
1/2 tsp salt
1/4 tsp cracked pepper
2 tbsp nutritional yeast
2 large kumara, chopped into fries
Drizzle olive oil
1 tbsp Kavita’s Kitchen curry paste
Salt & pepper
Preheat the oven to 180 degrees Celscius. Drizzle your kumara fries with oil and place evenly on a lined baking tray. Brush each fry with some of Kavita’s Kitchen curry paste then season with salt & pepper.
Bake in the oven for 30-40 minutes until crispy. Take out halfway and turn each fry over then place back in the oven for the other half.
Meanwhile, add all burger patty ingredients to a food processor except the flour and pulse a few times. You don’t want to make a puree, you just want everything to break down slightly so it’s easier to mix.
Transfer to a bowl and mix in the chickpea flour.
Heat a large pan with oil. Shape your patties to your preferred size then fry in the pan on a medium heat until golden brown on each side.
Enjoy!
