1 tub Rogan Josh paste
2 cans kidney beans drained and rinsed
1 chopped capsicum
1/2 cup of chopped pumpkin or kumara
1/2 cup of sweet corn
1/2 cup of greens ( broccoli, kale or spinach)
1/4-1/2 cup water
1-2 Tbsp of corn starch dissolved in little water to add at the end of cooking process
Simmer all the above ingredients with the Rogan Josh paste.
Once cooked add dissolved cornstarch to thicken this delicious filling. Watch out don’t eat it yet 😂
Use either or short or puff pastry as a pie base pressed into a dish
Pour the cooked filling.
Cover wirh puff pastry and brush with egg wash, milk or plant milk
Bake at 190c 45 min until golden brown
