Ingredients

Rogan Josh paste

big chunks of tofu

madras paste

eggplant

okra

coconut cream

Method:

We used the Rogan Josh paste to marinate some big chunks of tofu, which we baked in the oven before adding to the sauce and we used the madras paste to make a vegetable curry with eggplant and okra. 
Both curry pastes made beautiful sauces – if anything we probably made them a little bit too watery & could have used more coconut cream instead!
