Ingredients
3 Tbsp madras fusion paste
3 medium potatoes
500g fish
Salt and chilli to taste (you can use chilli powder, flakes or fresh)
Boil potatoes with skin on until done. Drain and set aside until cooled.
Peel and mash leaving some lumpy bits.
Pan the fish with the paste until flaky. Careful not to overcook.
Combine the fish and potatoes and pat into patties.
Tip: If the patties aren’t binding together add 1 Tbsp of corn flour or plain flour.
Pan fry with some oil until golden brown
Serve with tamarind sauce.
