Thai Rice Noodle Soup

Ingredients

1 head cauliflower

Batter
1/2 cup flour
1/2 tsp onion powder
1 tsp cumin
1/2 tsp garlic
Salt & pepper
1/2 cup soy milk
1/2 tsp baking powder
1 tsp curry powder
Dash of water

Sauce
2 tbsp Kavita’s Kitchen Rogan Josh curry paste
1 tbsp olive oil
2 tsp maple syrup
2 tsp tomato paste

Dipping sauce of choice to serve (e.g sweet chilli, mint yoghurt, etc)

Method:

Cut cauliflower head into florets. Preheat the oven to 180 degrees Celcius.

Mix all the batter ingredients together in a bowl. Coat the cauliflower florets in the batter and place on a lined baking tray. Bake for 20 minutes in the oven.

Meanwhile mix together your sauce ingredients. Once the cauliflower has been in the oven for 20 minutes, brush each floret with the sauce. Make sure each floret is well coated then place back in the oven for another 15-20 minutes.

Serve with a dipping sauce of your choice and enjoy!
