Sweetcorn Fritters

Ingredients

1/2 cup water
3/4 cup chickpea flour
1/2 red onion chopped
1 can sweetcorn
1 1/2 tbsp curry paste
1 tbsp chopped parsley
Optional 1/2 cup grated vegan cheese 
Salt & pepper to taste

Method:

Mix everything together in a bowl. Heat some oil in a large fry pan and spoon 1/4 cup of the mixture into the pan. Flatten it slightly and cook for 3-4 minutes on each side until golden. It should be easy to flip so if it’s not then it’s not ready to flip yet! Enjoy with some sweet chilli sauce
